Heat the oil in a saucepan and fry the bacon until crispy. Add the mushrooms and cook for 5 minutes, then add the garlic, tomatoes and herbs. Season with salt and freshly ground pepper and steam for another 5 minutes.

Make the tagliatelle ” all dente ” in enough salted water, drain and mix well with mushrooms and cheese. Transfer to a warmed serving bowl and serve hot.
