Cut the melanzane into slices two cm thick. Brush with clarified butter, season. Place on a baking sheet covered with parchment paper. Bake in the middle of the oven heated to 200 degrees for fifteen minutes. Cool slightly.
For the crust, mash feta with a fork. Mix well with remaining ingredients, season.
Spread the feta-olive mixture evenly over the melanzane.
Bake under the broiler or in the upper part of the oven heated to 250 °C for three minutes.
Garnish with olives.
Tip Can be prepared the day before: Bake the rondelles in the oven before serving.
Tip: Instead of clarified butter, you can also use butter in most cases.
