For the zucchini cake, grate the zucchini first and drain the water. Mix the eggs with powdered sugar and vanilla sugar and stir in 1/8 liter of oil. Mix flour, cinnamon, baking powder and grated nuts and add to the batter and mix. Finally add the grated zucchini and mix.
Line the baking tray with baking paper and preheat the oven to 150° convection for 5 – 10 min. Spread the dough on the baking tray lined with baking paper and bake at 150° convection oven for approx. 55 min.
Heat cooking chocolate and butter in a saucepan. Spread jam on the ready-baked zucchini cake (warm it slightly) and pour the chocolate butter mix over it and spread it.
