Baked Ham Fritters

Light butter or possibly butter, eggs and sour cream from the refrigerator, so that they are warm to the touch when processing. Cook Fleckerln in salted water until al dente, drain, rinse and drain well. Grease the gratin dish with light butter or butter and sprinkle with 2 tablespoons of the breadcrumbs. Preheat oven to 180 degrees. Cut the smoked meat into small cubes. Separate eggs into yolks and clear. Stir soft light butter or possibly butter until creamy, gradually stir in yolks.

Season with salt, pepper and grated nutmeg. First add sour cream, then Fleckerln, smoked meat and parsley.

Whip egg whites with 1 pinch of salt until creamy, stir half of the whipped egg whites into the Fleckerl mass, fold in remaining whipped egg whites. Pour the mixture into the prepared form, spread evenly and sprinkle with cheese and 1 tbsp. breadcrumbs. Drizzle 2 tablespoons of melted light butter or butter over the ham and bake in a heated oven for about one hour until golden brown. The best accompaniment to the ham fritters is green leaf salad.

Tip: Always use an aromatic ham, this will give your dish a wonderful touch!
