For the cinnamon stars, first scrape out the vanilla pod. Mix the vanilla pulp and the dry ingredients. Then add butter, egg yolk, lemon juice and zest and quickly knead into a smooth dough.

Form the dough into a ball, wrap it in plastic wrap and let it rest in the refrigerator for 2-3 hours.

In the meantime, beat egg whites with powdered sugar and a squeeze of lemon juice until stiff.

Preheat the oven to 160 °C and line a baking tray with baking paper. Dust the work surface with a little flour.

Roll out the dough thinly and cut out stars. Place on the baking tray and brush the stars with the egg white.

Place in the oven and bake the cinnamon stars for 15-20 minutes. It is best to put a wooden spoon in the oven door so that the steam can escape.
