For the zucchini pancakes grate zucchini, finely chop leek and mix well with the other ingredients.

Put heaped tablespoons of the mixture into the hot clarified butter and flatten. Fry until edges are browned, then turn and finish frying.

Drain zucchini pancakes on a paper towel and serve.
