Summer main dish: With beans, potatoes and tuna a lush leafy salad variation.
Make egg, beans and potatoes, preferably the day before.
Stir the ingredients for the vinaigrette very well until the spices are mixed with the vinegar and oil to form a thick sauce.
Mix all ingredients except egg and chives into the vinaigrette and arrange on a bed of red and green lollo leaves.
Garnish with chives and egg quarters.
Serve with crusty and slightly warm French baguettes.
