Instructions:

Peel garlic clove and shallots, cut into coarse pieces together with carrots, yellow beets and parsley root.

Add cold water with the peppercorns and a little salt, bring to a boil, simmer for 2 1/2-3 hours.

Strain the stock through a sieve and use as desired.
