Drain gherkins and olives, chop. Remove seeds from cucumber, dice. Finely dice onions. Core tomatoes, dice. Cut matie fillets in half lengthwise, cut diagonally into pieces, mix everything together. Stir through water, salt, white wine vinegar, pepper, sugar, oil, pour over lettuce, steep 1 hour.
