For the plum dumplings, first peel the potatoes and boil them in salty water.

Strain and mash well. Add butter and mix everything well. Allow to cool.

Add eggs to cooled potatoes, mix and gradually add flour. Turn the mixture onto a surface and knead until the dough is smooth.

Wash the plums well, pit them and sprinkle the inner sides with sugar and a little cinnamon.

Sprinkle the work surface with flour. Roll out the dough to about 1 cm thick and cut into larger squares. Wrap the plums in the dough and round them a bit with your hands.

Put the dumplings into boiling water and cook until they rise to the surface.

Heat the oil in a pan and lightly fry the breadcrumbs. Add a little cinnamon as well, if desired.

Place the dumplings on a plate and garnish with toasted breadcrumbs.

Serve the plum dumplings hot or cold.
