Maybe your new favorite bean dish:

Put ham shank with bay leaf and peppercorns in the water, make about three hours.

Add soaked carrots, soup vegetables, baked fruit, celery and leek, season with white wine vinegar and sugar and make another twenty min.

Remove meat, cut into bite-sized cubes.

In the meantime, add the cloves (see below) to the clear soup, cook until they rise. Pour in meat repeatedly, season with herbs.

Flour dumplings: Bring water to a boil, add butter. As soon as it boils, stir in flour. Remove from heat, gradually fold in eggs. Season choux pastry with salt, cool a little, form small dumplings and put them into the soup. When they rise, they are done.
