For the salmon in pasta nest, cook the pasta in plenty of salted water.
Cut the salmon into pieces, salt, pepper a little, sprinkle with lemon juice and sear in hot oil on both sides (should still be glassy inside), keep warm.
Melt the onion in the residue, deglaze with wine and reduce briefly. Add cream and season with herbs, salt, pepper and possibly lemon.
Bring to the boil and mix with the pasta. Portion onto plates and place the salmon pieces on top. Serve the salmon in the pasta nest.
