Cook the bacon and the smoked meat in salted water for about 1/2 hour, then add the sauerkraut and cook for another 1/2 hour. In the meantime, prepare so-called “Trippen” (mashed potatoes) by boiling the peeled potatoes in salted water until soft and then, while still hot, roughly mashing them with the help of a wooden spoon. Meanwhile, heat the lard in a pan, cut the onions into rings and roast them in the hot lard until golden brown. The crispy onion rings together with the remaining lard are now poured over the potatoes and served together with the “Faschingsspeck” (bacon), which has been cut into pieces and arranged on the sauerkraut.
