For the tomato sauce, heat olive oil in a large pot. Sauté the diced onion very slowly over half the heat.
Scald the tomatoes with boiling water, peel and squeeze out the seeds. Put the tomato pieces on the onions, add the peppers and all the herbs and spices and simmer on low heat without a lid for about 2 hours until a wooden spoon drawn through the bottom leaves a groove.
