Make the brown lentils in water about 20 min (red lentils much shorter). The cooking water should be absorbed. Mix finely chopped onion with the spices, vinegar and oil and parsley. Mix the sauce into the lentils while they are still warm and let them soak for at least half an hour. However, the mixture can be left to infuse just as safely for longer. Stir in olives and coarsely crumbled cheese just before eating.
