For the pork roll roast, rub the meat with pepper and salt and sear vigorously on all sides in hot fat. Peel the onion, chop coarsely and add to the rolled roast with boiled beef broth.

Cook for 1-1.5 hours. Let roast cool, cut into slices and arrange on a platter.

Peel the onion and apple, core the apple. Cut both into small cubes and saute in oil for about 5 minutes. Prepare curry sauce, remove from heat and stir in mayonnaise, curry and pepper and let cool.

Wash tomatoes, cut a small lid off the top and scoop out the tomatoes with a small spoon. Lightly pepper and salt the inside and fill with curry apple mayonnaise. Put the little lids back on the tomatoes, garnish with parsley and surround the pork roll roast on the platter with it.
