For the dandelion honey, simmer everything ,except the sugar, for 45 minutes, remove from heat and let steep covered for 2 days. Then bring to the boil again and strain the decoction.

Simmer with 4 kg of sugar for 2 to 3 hours and pour into sterile jars while still boiling hot. This makes about 4.5 kg of dandelion honey.
