For the anti-hangover omelet, first cut the sausage into thin strips. Finely chop the chili pepper (if you don’t want it so spicy, remove the seeds beforehand). Wash the herbs, dry well and chop finely. Peel the onion and chop finely as well.

Heat some oil in a pan. Sauté the onion until translucent. Add chili, sausage and anchovies and fry. Season with salt, pepper and cumin.

Whisk whipping cream, eggs and salt. Heat a little oil in another pan. Pour in the mixture and fry, turn and fry from the other side as well.

Take out, put the filling in the middle, sprinkle with herbs and fold the anti-hangover omelet.
