With a low-cholesterol diet, you by no means have to give up ice cream. You are allowed deliciously refreshing sorbets at any time.

Rinse and clean the strawberries. Set aside some of the fruit for garnishing. Blend the uerbigen in a hand blender, then strain through a sieve.

Wash the untreated orange with hot water, finely grate the peel.

Squeeze the juice from both oranges. Stir the zest and juice together with the honey in a small saucepan over low heat. Add the strawberry pulp. Allow the syrup to cool.

Transfer to a metal bowl as wide as possible and place in the freezer with the lid closed. After about half an hour (a layer of ice should have formed), whisk heartily, return to the tk compartment. Freeze for another 2-3 hours, heartily whisking a few times in between.

To serve, heartily whisk the sorbet repeatedly or possibly blend with a blender. Shape into balls, garnish with strawberries set aside.

Suitable for guests. Good to prepare in advance.

Tip. According to the same recipe you can cook sorbets with always different fruits. Hard fruits must be steamed briefly before pureeing. Fruits with firm peels or seeds or stones must be passed through a sieve.
