For the jam donuts, mix the jam with lemon juice and chia seeds and let swell for about ½ hour. Heat up the donut maker.
If you don’t have oat flour, put the rolled oats in a chopper and chop them in it until they are fine powder.
Mix the flour with salt, and baking soda. Mash banana with a fork and mix with the jam mixture. Add the flour mixture and mix everything well.
If necessary, thin the dough with a little oat milk. Pour the batter into a piping bag and pipe it in batches into the molds in the donut maker.
Close the donut maker, let it bake for 3-4 minutes and place the finished donuts on a cooling rack to cool. Heat the jam, brush the donuts with it and sprinkle with the chopped pistachios.
