Clean strawberries and cut in half.

Remove orange peel from the orange with a sharp kitchen knife (without white skin) and cut into narrow strips.

Blanch briefly in hot water in a sieve – add to the strawberries form with the juice and sugar.

Chop the mint and add it to the strawberries.

Marinate the strawberries for at least 1 hour.

Bring the whipped cream to the boil with a scraped vanilla pod – simmer the pod.

Beat the egg yolks with the sugar over a bain-marie until creamy.

Later add the vanilla cream, stirring throughout, until creamy.

Cool and bring to the table in a cup with the marinated strawberries.
