For homemade pasta with herb mushrooms and shrimp first prepare the pasta dough.
To do this, knead all ingredients into a smooth dough, wrap in plastic wrap and let rest for 1-2 hours.
Roll out thinly with a pasta machine or dough roller and cut as desired. Simmer in salted water for 3-4 minutes.
For the shrimp, heat olive oil with vanilla bean, garlic and thyme in a pot and let sit for 15 minutes. Then heat the oil to 85 °C.
Add the shrimp (should be at room temperature) to the warm oil and confit for about 5 minutes (slow fry in oil that is not too hot). Drain on kitchen paper.
Sauté the herb mushrooms in a hot pan with olive oil, garlic, dried tomatoes and rosemary. Season with basil, salt and pepper and finish with butter.
Sprinkle the Homemade Pasta with Herb Sprouts and Shrimp with freshly shaved Parmesan and serve.
