For the homemade puff pastry, quickly knead flour with finely and flaky cut butter and form into a brick. Wrap in greaseproof paper and let rest in the refrigerator for 30 minutes.

Prepare a pasta dough with flour, water and salt, which should no longer stick. Chill the pasta dough as well.

Roll out pasta dough on a lightly floured work surface, place butter-flour piece in the center, fold dough over from right and left sides and press edges smooth.

Roll out dough package to open side, carefully in one direction, up and down, not diagonally. Fold the dough sides over each other from the top and from the bottom to the middle and chill again for half an hour.

Repeat these “tours” three times. Use as little flour as possible to roll out. If the dough sticks, fold it into a package and put it in the refrigerator for 15 minutes, then continue processing.

Homemade puff pastry is best baked in a heated oven at high heat.
