An unusual risotto recipe that will make your heart beat faster: A combination of risotto and pizza – what more could you want!

First prepare the risotto (this can be done very well the day before or at all in advance). Heat the prepared soup. To do this, peel and finely dice an onion. Sauté in a pot with a little olive oil until translucent. Add the risotto rice and sauté very briefly. Add the soup little by little, stirring occasionally. Pour just enough to cover the rice. Cook al dente over medium heat for about 20 minutes, pouring in the white wine only at the end and stirring once more.Then remove the pot from the heat, stir in the freshly grated Parmesan and stir with the butter until creamy. A perfect risotto should be wonderfully creamy but still al dente! Season with salt and pepper to taste.

Allow the risotto to cool. Then, in a springform pan – or even an aluminum pan – pour the risotto as a base and press well. The risotto replaces the pizza dough.Now apply the tomato sauce to the base and finish with a layer of mozzarella. Bake briefly in the oven until the cheese has melted nicely. Sprinkle with fresh basil and the delicious prisotto is ready!
