For the herb salad, bring water to a boil in a saucepan, immerse tomatoes briefly in the hot water. Peel off the skin and dice the tomatoes.

Mix diced tomatoes with vinegar, oil, salt and pepper. Peel and dice onion. Peel and press garlic.

Stir in diced onion and garlic. Slice cucumber, slice carrots, slice bell bell pepper into thin strips.

Stir vegetables into tomato sauce. Finely chop herbs and garnish herb salad with them before serving.
