Scrape the pulp from the vanilla pod.

Sift flour with a pinch of baking powder, a pinch of salt and cinnamon. Mix with yolks, butter, cream, lemon zest and vanilla pulp until smooth.

Whip egg whites with sugar to egg whites and fold into batter.

Preheat the waffle iron and grease it.

Bake the waffles.
