For the buttermilk pancakes, preheat a cast-iron pan to the right temperature, mix all the ingredients except the water well with a whisk and only at the end add the soda and mix again.
The dough should be thick. If the dough is too liquid, add some more flour, if it is too thick, add some more liquid. Add a little oil to the pan and spread well. Pour batter into the pan with a ladle. Depending on the pan, make 3 – 4 pancakes. Allow to bake on both sides.
Make sure that the pancakes do not burn, for this it is best to loosen the pancakes slightly in the pan with the help of a spatula and move them briefly before turning them over.
Serve the buttermilk pancakes with chocolate sauce/maple syrup or fruit as desired. The batter is enough for about 6 – 8 pieces.
