Rinse and clean strawberries and place in a mold that has been rinsed to cool.
Heat the strawberry syrup. Soak the gelatine according to the instructions, squeeze it out and let it melt in the hot syrup. To make the mixture solidify faster, add the cold water only now. Pour this liquid over the strawberries and place the dessert bowls in the refrigerator.
Serve: When set, turn out onto plates and pour custard around, garnish with plucked leaves of lemon balm.
Instead of vanilla sauce you can also use semi-solid whipped cream or vanilla ice cream.
