Apple Waffles with Cinnamon Ice Cream

Waffles:

Mix the butter with the sugar (I) until thick and creamy, add the egg yolks, the vanilla powder and the flour and finally carefully stir in the ice whites beaten to stiff peaks with the sugar (Ii) and the apples. Bake in a waffle iron.

Ice:

Bring the milk and whipping cream to a boil. Stir the yolks with sugar and and cinnamon, add to the hot milk-whipped cream mixture form and heat to about 80 °C while stirring throughout. The quantity must not make in any case.

Strain through a sieve and set aside to cool. Freeze in the freezer, stirring several times, or possibly turn in an ice cream maker.

Arrange the still hot waffles with apple pieces and cinnamon ice cream.
