Instructions:

Cut the oxtail into pieces about 5 cm long and put in cold water with greens and other ingredients to boil.Cook the soup slowly for 4-5 hours, then remove the soft pieces of meat from the bone and divide into lengthwise pieces.Peel the onions, chop finely and boil down in red wine. Dissolve leaf gelatin in cold water and mix with 1/8l of ox soup and the red wine-onion reduction, season to taste and pour into a triangular mold. Refrigerate for at least 6 hours.Turn out the cooled oxtail from the mold and cut into triangular pralines. Bread the prepared pralines in flour, egg and white bread crumbs and fry them in hot fat until golden brown.Wash the meadow herbs and leaf lettuce well and pluck them into bite-sized pieces. Marinate the meadow herb salad with nut oil, balsamic vinegar and vanilla sugar.
