Put the clay mold in water for 10 minutes. Clean the onion and apple and cut them into pieces. Leave the goose fat out and cook the onion in it until transparent. Add red cabbage, apple and clove, pour in apple cider and season with pepper and salt. Put the red cabbage into the drained mold and spread the chestnuts evenly over it. Place cleaned and dabbed dry goose giblets on top. Cover the dish and place in a cold oven, cook for about 1 hour at 250 degrees. Before serving, remove the goose giblets from the bones and cut into bite-sized pieces.
