For the pumpkin noodles, sprinkle the flour on the work surface. Make a well in the center. Add the egg, pumpkin puree and salt to the well.
Mix it all together and knead it into a dough. The dough should be smooth and not stick to your fingers.
Knead in a little water or flour, depending on the consistency. Then brush the dough with olive oil and let it rise for 30 minutes.
Then roll out the dough flat, and cut into noodles or lasagna sheets. Let the pasta dry for 5 minutes before cooking.
If you want to cook the pumpkin pasta, boil in salted water for 5-8 minutes al dente.
