For the young onion-ginger soup, first wash the young onions, remove the outer leaves if necessary and finely chop the young onions. Peel the ginger and chop finely. Heat the oil in a pot and sauté the young onions and ginger in it.

Deglaze with wine and then add soup and whipping cream. Simmer briefly until the young onion is soft. Then season with salt and pepper and puree.

Serve young onion-ginger soup garnished with fresh cress.
