Heat the light butter gently, fry the onion slices in it until light brown. Add salt, potatoes, chili spice and turmeric powder. Add water and simmer over low heat until the potatoes are cooked. Then add the tomatoes, quartered onions, green and red ginger, chilies, coriander and sugar. Do everything again for 2-3 min at high temperature. The potatoes and tomatoes should be cooked but not too soft. Then sprinkle the garam masala on top, stir gently and serve hot.
