Briefly rinse the chicken breast, dry and make 25 min in little water, cool and cut off the meat. Cut white cabbage into very fine strips. Clean carrots, cut into slices and into carrot flowers. Remove the skin from the onion and cut into fine cubes.

Mix everything with a little water, 2/3 of the vinegar and salt, squeeze well (or drain through a sieve) and dry. Briefly rinse and dry the mint sprigs and chop finely.
