Mexican Chicken Wings with Garlic Lime Dip

For the marinade:

For the marinade, combine tomato paste, ketchup, tamarind paste, garlic, chili, paprika, lime juice, salt, cayenne pepper, a dash of tequila and cooking oil.

Pour the marinade into a large sealable container and place the chicken wings in it. Close and let sit in the refrigerator for at least 1 hour.

Meanwhile, for the avocado dip, peel and pit the avocado and mash the flesh with a fork. Mash with lime juice, a hard egg, salt, chili powder and yogurt.

For the garlic lime dip, grate the zest of an untreated lime and stir into the Greek yogurt along with its juice, crushed garlic, salt, pepper and garden cress.

Spread the chicken wings on one or two baking sheets and bake at 220 °C for 20 minutes or prepare on the grill.
