For the rice noodles with spinach and tomatoes, boil the rice noodles briefly in a little water until soft. Heat a little oil in a saucepan and sauté the garlic.

Add the spinach and fry briefly. Cut tomatoes into quarters and mix with rice noodles. Simmer on low heat for about 5 minutes.

Chop basil and mix in. Season rice noodles with spinach and tomatoes with salt and pepper and serve.
