For the London wafers, first prepare the dough.
Crumble the butter and flour. Add sugar and yolks and work into a dough. Let rest in the refrigerator for at least one hour.
Now press the dough onto a baking sheet covered with baking paper. Spread with apricot jam. Beat the egg whites until firm, fold in the sugar, vanilla sugar and nuts and spread on the apricot jam layer.
Bake the London wafers at 190°C top-bottom heat.
