For the parsnip porridge, wash, peel and finely dice the Jerusalem artichokes and parsnips. Bring the mineral water to the boil and cook the vegetables until soft.

Strain and collect the liquid. Strain vegetables, add butter and steam for 2 to 3 minutes. If necessary, add some more liquid until the parsnip porridge has the right consistency.
