For the fruit dessert, clean and core the fruit. Bring the fruit and sugar to the boil briefly and allow to cool. Mix a little of the dessert sauce with guar gum and boil briefly.

Whip the cream and fold in the remaining dessert sauce. Pour onto the cooled compote and decorate with an edible flower if desired.
