For the pumpkin seed bread, first mix the flours and half of the water with yeast and some flour to a thick pre-dough. Cover and let rest for 30 minutes.

Knead with all other ingredients to a smooth dough, finally incorporate the pumpkin seeds. Cover and let rise for 30 minutes. Knead again and let rise again for 20 minutes.

Put the dough on a baking sheet, brush with water and sprinkle with seeds. Bake the pumpkin seed bread in a preheated oven at 190 °C for about 40 minutes. Place a pot of water on the bottom of the oven.
