Burger Buns with Pumpkin Seed Flour

Instructions:

First, mix the flours.

Mix the dry yeast with milk, sugar and a little of the mixed flour and let it rise for 5-10 minutes in a warm place, covered with a moistened cloth.

Then knead with the remaining flour, salt, oil and the egg (set aside some of the egg white to coat) until smooth. Let rise for at least 30 minutes.

Knead the dough well one more time, form it into a roll and cut it into 6 equal parts. Turn each part loosely between the hollow of your hands until the dough has formed a smooth surface.

Place on a baking sheet lined with parchment paper (not too close together) and let rest again, covered, for about 15 minutes.

Brush the burger buns with the remaining egg white and sprinkle with chopped or grated pumpkin seeds.

Bake in the preheated oven at 220 °C for about 15 minutes.
