Quarter the pumpkin, peel, remove the soft fiber part and the seeds and cut the firm flesh into 1×1 cm cubes. Add water and sugar to a saucepan and bring to a boil. Add 1 tablespoon lemon juice, apple cider vinegar, cinnamon stick and cloves and simmer the pumpkin compote for about 10 minutes over medium heat. Pour into compote bowls, let cool and serve.
