Peel apples, cut into quarters, remove core, cut into wedges.

Bring apple juice, sugar and lemon peel to a boil, add apples, steam for about 5 minutes until soft, cool. Remove lemon peel, pour Calvados over apples.

Slightly thaw vanilla ice cream, offer with it.
