Pasta Casserole with Melanzane

Try this delicious pasta dish:

Cut the melanzane into 1 cm thick slices, sprinkle with salt and draw water on a broiler.

Preheat the stove to 220 degrees (gas: 4). Make the pasta al dente, drain and stir in 1 tbsp olive oil. Meanwhile, dice onion, greens and garlic.

Rinse the melanzan slices thoroughly under running water and pat dry with kitchen roll. Roast in 3 tbsp olive oil on both sides until brown, they absorb oil all together at the beginning, but form it repeatedly when they are cooked. Then remove the slices of melanzana, add another tbsp of oil to the frying pan and sauté the diced vegetables. Before they start to take color, add the diced tomatoes and cook their liquid a little. Season to taste with salt and freshly ground pepper.

Grease an ovenproof dish with 1 tbsp of oil. First spread 2 tablespoons of tomato sauce evenly in it, place a layer of melanzan slices on top, then spread the pasta evenly over it. Sprinkle with plucked oregano or basil and 2 tbsp grated cheese, pour half of the tomato mixture on top. Cover with slices of melanzana and spread the rest of the tomatoes on top. Sprinkle the remaining cheese on top and drizzle with the remaining olive oil. Place in the hot oven and cook for 30 minutes until golden.
