For Orange Burger Buns, preheat the oven to 220 °C. For the pre-dough (“Dampfl”) mix yeast with water, oil and sugar and let rise for 5 minutes.
Mix the dried tomatoes with the flour. Add the egg, salt, tomato paste and flour mixture to the Dampfl and knead everything into a smooth dough. (If the dough becomes too soft due to the tomato paste, add a little flour).
Form the dough into a roll, divide into 12 pieces and “drag” into balls: While doing this, loosely turn the dough balls between the hollow of your hand and work surface until the dough has formed a smooth surface.
Place the dough balls on a baking sheet lined with parchment paper with enough space between them, cover with a dish towel and let rise for 15 minutes.
Brush the Orange Burger Buns with egg white (or water), sprinkle with sesame seeds and bake for 10 – 12 minutes.
