The spice mixture for green sauce can usually be bought ready-made from the greengrocer.
Otherwise, enough (about a handful) of each of the kitchen herbs should be used.
Chop the herbs, put them in a suitable bowl and mix with sour cream or crème fraiche and yogurt.
Chop the eggs and fold them in.
Season with salt, pepper and juice of one lemon.
Cook the sauce for about 120 minutes before serving so that the herbs can infuse.
Serve with potatoes.
