For the nut dumplings, whisk the yolks with water, add as much flour and knead until a homogeneous mass is formed.
Bring water to a boil, form the dough into dumplings using a small spoon and place in the boiling water. When the dumplings float on top, they are ready.
Mix the powdered sugar, vanilla sugar and nuts and heat in a pan. Put the finished gnocchi into the pan and fold them into the sugar mixture. Sprinkle the nut gnocchi with cinnamon.
