For the Mediterranean vegetables, first cook the potatoes with the skin.
Wash the vegetables and cut them into coarse pieces. In a pan with high quality olive oil, fry the onion and add the crushed garlic clove, rosemary and finely chopped chili, add the rest of the vegetables.
Add the potatoes with their skins and brown everything nicely. Season the Mediterranean vegetables with the herbs, salt and freshly ground pepper.
