For tarte flambée with camembert and apple, first prepare the dough: To do this, crumble the yeast and mix with sugar until the yeast is liquid. Pour flour, salt, oil and water into a suitable bowl. Add the yeast and knead to a smooth dough. Cover and let rise for about 1/2 hour.

In the meantime, for the topping, peel onion and cut into fine rings. Cut Camembert into thin slices. Wash and core apple, also cut into thin wedges and immediately coat with lemon juice.

For the cream, wash and pluck thyme, setting aside a small amount. Mix crème fraîche with sour cream, yolk, thyme, salt and pepper until smooth.

Preheat oven to 200 °C. Line a baking tray with baking paper (or grease and flour it). Knead dough again vigorously. On floured work surface, roll out into a rectangle, as thin as possible, and place on prepared baking sheet.

Spread cream on the bottom of the dough. Spread onion rings, apple and cheese slices on top, sprinkle with remaining thyme. Bake in hot oven for about 10-15 minutes.

Serve tarte flambée with camembert and apple with cranberry compote.
